Notes: I love that this recipe is easy and delicious. You don't even have to boil the lasagna noodles. It is also quite versatile. You can literally add any vegetable to it. I use whatever I have in the fridge, even leftover veggie sides. One time, I added broccoli and asparagus and it was tasty. In this version, I used mushrooms, spinach and beef but feel free to play around and modify it!
I often skip the lasagna boiling step. I add milk to help cook the noodles during the baking step. I use oven ready lasagna noodles but regular noodles also work for the no boil method.
Ingredients:
9 lasagna noodles 12 oz. shredded Mozzarella cheese 15 oz ricotta cheese 1/2 cup onion, finely chopped 16 oz. ground beef 1/2 tsp salt 1/2 tsp black pepper 8 oz. sliced mushrooms (1 small pack of mushrooms) 3 cups fresh spinach (Chopping optional) 1 24-26 oz Jar pasta sauce (your choice on flavor) 1 cup milk (for no-boil method) 1 tsp olive or any vegetable oil (for boil method)
Method:
1. Preheat the oven to 375 degrees. 2. In a saucepan, cook the ground beef until brown. Season with pepper, salt, and onions to taste. 3. Bring a large pot of water to a boil. Add the lasagna noodles and a tap of olive or vegetable oil to the boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. (Skip this step if you are doing the no boil method). 4. To assemble, spread 1/3 jar of pasta sauce in the bottom of a 9 x 13 inch baking dish. Sprinkle 1/3 of the cooked ground beef, chopped mushrooms, and spinach. Arrange 3 noodles lengthwise over meat sauce. Spread one third of the ricotta cheese over the nodules. Sprinkle a third of mozzarella cheese over the ricotta. 5. Repeat the previous step 2 more times.
6. For the no boil method, add 1 cup of milk to the pan. 7. Cover with foil and bake for 40 minutes. Uncover and bake for additional 10 mins. Check to see if noodles are tender to your desire as ovens vary. If needed, make an additional few minutes. Let cool for 10 minutes before serving.
